Summer Salad with Garbanzo Beans and Cucumber

 

I hardly want to turn the stove on with summer in full swing and with all this organic fresh vegetables form the garden. This garbanzo and cucumber recipe require no cooking. I made this salad for lunch or also could be a good side dish for some steaks.

 

Serves 2

Ingredients

2 cups cooked garbanzo beans or 14oz can, drained and rinsed

3 small cucumbers,cut into dice,about the size of the chick peas

3 small tomatoes (Campari), diced

2 tablespoons olive oil

1 tablespoon apple cider vinegar

dill

salt and pepper to taste

 

Directions

Place all ingredients in a bowl and toss to combine. Season with salt and pepper.

Garnish with dill and serve.
