Aromatic vegetables add great flavor and plenty of vitamins while keeping the fat in check. What a wonderful way to eat your vegetables!
1 tablespoon olive oil
1 plum tomato, peeled, chopped
1 onion, chopped
1 carrot, chopped
1 celery stalk, chopped
2 garlic gloves, chopped
1 red bell pepper, chopped
1 parsnip, chopped
1 potato, chopped
1 leek, chopped
½ fennel bulb, chopped
4 cups homemade vegetable broth (chicken broth or water)
1 cup basil leaves (or parsley) chopped
Add olive oil to a large saucepan, over medium high heat. Saute all vegetables, about 8 minutes.Stir in vegetable broth and bring to a boil. Season with salt and pepper.
Reduce heat and simmer, uncovered, until flavors are blended, about 20 minutes.
Ladle soup into bowls and top with basil or parsley.
