Trout has an important role in home cooking, as it is rich in protein,and excellent source of omega 3.
Do not be deterred if you are unsure how to prepare it; the fish supplier can scale, clean and fillet the fish for you.
1/3 cup milk
½ cup flour
3 tablespoons butter
1/4cup olive oil
½ cup almonds
Salt and Pepper
Wash and clean very well the trout. Dip the trout in the milk and then in the flour. In a large skillet put the olive oil with half the butter. Cook the trout over medium heat for 13 minutes until browned on both sides. In this time cook almonds over low heat until browned. When the trout is done drain off the fat and season with salt and pepper. Transfer the trout to a dish and add on top the almonds and garnish with lemon slices and parsley. Serve immediately.
