You can cook large amounts of organic quinoa and save the leftovers in the fridge.
Then just mix in your favorite raw veggies to make a fast , protein rich salad any time you need it.
1 cup quinoa
2 cups hot water
2 cucumbers, chopped
2 plum tomatoes, seeded, chopped
1 yellow pepper, seeded, chopped
1 handful cilantro, finely chopped (optional)
1-2 tablespoon olive oil
salt and pepper to taste
In a medium saucepan cook the quinoa in hot water for 10 -15 minutes, until tender stirring occasionally. Allow to cool.
In a bowl mix together the cucumber, tomatoes, pepper, cilantro with a little salt and pepper. Gently toss the quinoa with the ingredients. Pour the olive oil and squeeze the lime over the quinoa. Add more salt and pepper to taste and mix all the ingredients.
