Quince Jam is lovely because it is not too sweet.
The jam turned out great, exhibiting a great color and flavor.
Serves 5 jars
8-9 medium quince, grated
4 cups sugar
2 cups water
1 pk vanilla sugar
Combine sugar with the water into a large pot, over medium heat and cook sugar to melt.
Drop all the grated quince in the boiling water and let them cook until soft. Stir in the vanilla sugar and mix.
Careful fill into jars , cover them with a towel and allow them to cool overnight without the lid on.
Next day screw on lids and refrigerate.
