1 pound fresh salmon ( 4 fillets)
2/3 cup fresh orange juice
½ cup brown sugar
1/3 cup orange marmalade
1 teaspoon grated fresh ginger
2 tablespoon finely chopped onion
salt and pepper to taste
parsley to garnish
Combine together the juice, sugar, onion, marmalade and ginger.
Place the salmon skin side down in a baking dish, add salt and pepper.
Pour the mixture over the salmon, cover and refrigerate for one hour.
Bake uncovered at 350 degrees F for 20 minutes.
Garnish with parsley before serving.
