Lemon Chicken on Red Cabbage Leaves

Try the organic recipe for lemon chicken loaded with fresh citrus flavor.


Serve 4


1.5 lb organic boneless skinless chicken thighs

1 lemon

2 springs of fresh oregano

salt and pepper

1 cup chicken broth or 1 cup water



Preheat oven to 400 degrees

In a baking dish place the chicken salt and pepper to taste.

Grate and squeeze the lemon over the chicken.

Sprinkle with fresh oregano and bake for 1 hour. After 30 minutes stir over the chicken broth and bake another 30 minutes.

Serve on red cabbage leaves with cabbage, vegetable or baked potatoes.
