This refreshing fruit compote it makes a delightful breakfast dish.
Serve with organic vanilla yogurt.
4 cups dried fruit, any combination of prunes, apricots, kiwi, pineapple, figs, apples, pears, peaches, raisins, papaya.
¼ cup pine nuts
1 lemon, cut into thin slices
½ cup honey
3 tablespoon fresh lemon juice
8 coriander seeds
2 cinnamon sticks
3 whole cloves
¾ cup organic vanilla yogurt
Place all the dried fruit in a large saucepan with enough water to cover. Simmer over medium heat, covered, until fruits are tender, for 10 -15 minutes. Add the honey, lemon, pine nuts, cinnamon sticks, lemon juice, cloves and coriander. Simmer, covered, for 5 more minutes. Remove rom the heat and leave the covered pot stand for 1 hour.
Serve warm or cold with vanilla yogurt.
