Caponata is one of the famous and delicious vegetarian dish coming out of Sicily.
Caponata Sicilliana is a vegetable stew dish composed of eggplants, potatoes, celery, tomatoes, pepper and vinegar.
This dish has a spectacular flavor different to all usual stew cooking.
1 pound potato, cubes
½ pound onion , sliced
1 pound eggplants, cubes
3 stalks celery, sliced
1 orange pepper , cubes
14 oz can diced tomatoes, undrained
4 basil leaves
½ cup vinegar
1 tablespoon sugar, dissolved in vinegar
salt, pepper, olive oil
Heat oil in a large , heavy saucepan over medium heat and saute onions with celery for 5 minutes. Remove from the heat ,place in a strainer and drain all the oil.
In the same pan heat oil and add potatoes, cook until are tender, golden brown.Remove from the heat, drain oil and set aside.
We will do the same with eggplants, until are tender.
The last one,fry the orange pepper, remove and drain.
In a small sauce pan pour diced tomatoes, basil leaves, salt and pepper and boil for 10 minutes.
Return to the heavy saucepan and place all the vegetables, tomato sauce, vinegar,salt , pepper,mix all.Cover and leave it on reduce heat to low 10 minutes.
Remove, sprinkle with fresh chopped parsley.
Serve as a salad, side dish or with toast.
