Simple and delicious with complementary flavors this fresh green beans combine with organic beef make a quick and tasty entree.
1 lb green beans
1 carrot, chopped
1 onion, chopped
3 cloves garlic
salt and pepper
3-4 cups beef broth
1 lb organic beef, cut in chunks
2 tablespoons olive oil
2 tablespoons tomato paste
Wash very well the beef and place it on nonstick skillet with 1 tablespoon of oil over medium heat for 5 minutes. Add 1 cup beef broth, cover and simmer for 1 hour. You can add more broth if necessary.
In this time in a medium pan add 1 tablespoon oil, onion, carrot, 2 garlic cloves sliced and cook over medium heat for about 5 minutes. Add green beans, salt , pepper and beef broth to cover the beans about 2 cups. Leave them to cook 40 minutes or until the beans are tender. Remove rom the heat and add 1 garlic clove minced. Let it rest.
When the beef is done add tomato paste and allow 5 more minutes.
Remove and serve the beef with green beans on top.
