Artichokes with Mozzarella

Artichokes are a delicious way to get nutrients ;an excellent source of dietary fiber, magnesium, Vitamin C, folic acid, niacin, riboflavin, thiamin, vitamin A, and potassium.

Artichokes with Mozzarella Recipe makes a perfect lunch or a side dish.


Serves 4

Ingredients

4 organic artichokes

2 lemons

4 tablespoons butter

salt and pepper

½ pound fresh mozzarella, sliced

Directions

Wash very well the artichokes and soak them in warm salted water to remove any accumulated dirt.

Cut bottom stems so that artichokes will sit flat and upright. Cut off the pointed top of the artichoke and snip tips from leaves with scissors. Dip in lemon juice to preserve color. Steam the artichokes until the leaves come off easily.

Preheat the oven on 375 degrees F.

Sprinkle with melted butter, salt, butter and place on top a slice of mozzarella and leave in the oven for about 10 minutes.

Garnish with lemon.
