Brussels Sprouts with Chestnuts

 

This two ingredients organic brussels sprouts and chestnuts are very full flavored and their mixture is considered the quintessential turkey side dish on Thanksgiving.

Serves 10

Ingredients

2 pounds organic brussels sprouts, trimmed and halved

2 tablespoons extra virgin olive oil

2 tablespoons lemon juice

salt and ground black pepper to taste

1 pound roasted, peeled chestnuts, sliced

1/3 cup organic chicken broth

1/3 cup prosciutto, finely chopped

Directions

Over high heat, bring a large pot of lightly salted water. Pour the sprouts and cook until barely tender, about 10 minutes. Drain well, pat dry with paper towels and cut the larger sprouts into halves or quarters. Heat the oil over medium heat in a large skillet. Add the prosciutto and cook for 5 minutes. Stir in the brussels sprouts, chestnuts, broth, lemon juice and bring to a boil over high heat. Cook for 7 minutes, stirring often, until the broth has evaporated. Season with salt and pepper.

Serve hot with turkey.
