Whole Roasted Chicken with Beer

Organic roast chicken with beer is tender, falling off the bone meat, crispy skin.

We are using just  salt, pepper, paprika, thyme, oregano on the chicken , which brings out the best in the chicken’s flavor.

The beer keeps the chicken meat wonderfully moist.

Serves 4-5

Ingredients

1 organic whole chicken

1 teaspoon salt

1 tablespoon sweet paprika

2 teaspoons black pepper

½ cup olive oil

6 garlic cloves, sliced

1 lemon, reserve the juice and cut the lemon in slices

12 fl oz corona beer

oregano and thyme


Directions

Preheat the oven to 425 F .

In a small bowl mix paprika, salt and pepper.

Rinse the chicken, then dry it very well with paper towels, inside and out. Cut in half the chicken breast

and rub the whole chicken with the spice mixture.

Into ovenproof dish with cover pour the olive oil, the lemon juice and sprinkle with the garlic.

Arrange chicken over garlic with the breast side up, add the lemon slices around (under the legs, wings, inside the chicken). Sprinkle with oregano and thyme. Pour the beer, but not over chicken, on the sides.

Cover and bake for 1 hour. When is done take the lid and leave it another 20 minutes until crisp.

Serve with garlic sauce and baked potatoes
