St Patrick’s Day Treats

In American cities with a large Irish people, St. Patrick’s Day is a very big deal. Big cities and small towns alike celebrate with parades, “wearing  green,” music and songs, Irish food and drink, and activities for kids such as crafts, coloring and games.

Serves 12

Ingredients

1 ½ cups all-purpose flour

1 teaspoons baking powder

½ teaspoon baking soda

2 eggs

1/2 teaspoon salt

1 stick unsalted butter , at room temperature

1 cups sugar

1 teaspoon vanilla extract

½ teaspoon lemon extract

1/3 cup buttermilk

lemon zest from 1-2 lemons

Frosting

5 tablespoon unsalted butter

8 oz cream cheese, softened

½ cup confectioners sugar

fresh lemon juice from one lemon

2 teaspoons vanilla extract

green sprinkles

shamrock sprinkles

Directions

Preheat the oven to 350 degrees. Prepare cupcakes tins by using 12 paper liners.

Combine flour, baking powder, baking soda and salt.

Whisk together the milk and egg in a medium bowl.

Beat the butter,sugar and lemon zest with an electric mixer on medium speed, about 3 4 minutes, until light and fluffy. Add the eggs with the milk, the flour mixture, lemon butter mixture, vanilla, lemon extract and mix well.

Place the batter into the cupcake tins. Bake 20 30 minutes, until golden.

Remove the cupcakes from the baking pan, place them on a wire rack. Cool cupcakes completely before frosting

Frosting Cream

Using a mixer on medium speed, cream the butter and the cheese until well combined, and gradually add in the sugar. When the butter and sugar are fluffy and smooth, add lemon juice, and then the vanilla extract.

Frost the cupcakes, carefully dip the sides in the green sprinkles, and add one shamrock on top.
