Ingredients
¾ cup flaxseed meal
¾ cup oat bran
1 ½ cup unbleached white flour
½ cup sugar
1 tablespoon cinnamon
1 teaspoon cloves
1 tablespoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 tablespoon chia seeds
1 tablespoon goji berries
1 cup carrots, shredded
1 cup blueberries
1 ½ cup apples, peeled and shredded
½ cup raisins
1 cup nuts, chopped
2 eggs
¾ cup milk
vanilla extract
Directions:
- Preheat the oven to 350 degrees.
- Use an electric mixer.
- Combine together flaxseed meal, oat bran, flour, sugar, cinnamon, cloves, baking soda, baking powder, salt, chia seeds, goji berries, carrots, blueberries, apple, raisins and nuts.
- Mix on medium speed about 2 minutes.
- In a small bowl beat the eggs, add milk and vanilla.
- Pour liquid ingredients into dry ingredients and mix well.
- Line muffin cups with paper liners.
- Fill muffin cups ¾ full.
- Bake for 20 minutes.
- Remove the muffins and place them on a wire rack.
