My guests loved them. You should have seen the surprise on their faces when I opened the oven to reveal the baking sheet loaded with rock salt and Oysters!

Ingredients
20 oysters on the half shell
3 slices smoked bacon, chopped
1 stick unsalted butter
½ cup red bell pepper, finely chopped
½ cup shallots, minced
¼ cup celery, finely chopped
¼ teaspoon Worcestershire sauce
1 tablespoon lemon juice, fresh
rock salt
fresh parsley,minced
Directions
Preheat oven to 400 degrees.
In a food processor place the butter, red bell pepper, shallots,celery, Worcestershire sauce, lemon juice, mix about 50 seconds, until combined.
Over medium heat, using a non-stick frying pan, cook bacon, until its not pink anymore and crispy. Remove and place it on a paper towel.
Place rock salt on a baking sheet and bake for 10 minutes. Add Oysters in the hot rock salt. Add 1 tablespoon of the butter mixture and top with bacon on each oyster.
Bake oysters for 10 -12 minutes.
Remove , garnish with parsley and serve.
