Healthy organic muffins can be made to be delicious for kids.
These muffins are loaded with minerals, vitamins, protein and make a healthy snack for kids.
Serves 24 muffins
Ingredients
1 ½ cups whole wheat flour
1 ½ cup white flour
½ cup sugar (1 cup sugar if you would like more sweet)
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground ginger (optional)
1 tablespoon vanilla sugar
1 teaspoon vanilla extract
1 ¼ cup sunflower oil
4 eggs
4 large carrots, grated
1 large zucchini, grated
1 ½ cups fresh blueberries
zest from 1 lemon
Directions
Preheat oven to 350 F.
Mix sugar, oil, eggs and vanilla extract for 5 minutes.
Combine dry ingredients whole wheat flour, white flour, baking powder, baking soda, salt, cinnamon, cloves, ginger and vanilla sugar. Pour dry ingredients into wet ingredients and mix until just combined.
Mix in carrots, zucchini, lemon zest and then blueberries. Scoop into muffins cups and sprinkle with cinnamon (optional) if you would like.
Bake for 30 minutes.
