Wonderful healthy dessert for Halloween made with spaghetti squash. Happy Halloween!
“Eat, Drink and Be Scary”
Serves 8
Ingredients
1 small spaghetti squash
1 cup milk
3 eggs
4 tablespoons flour
2 tablespoons sugar
2 tablespoons olive oil
¼ cup butter, melt
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon ground cloves
1 pk vanilla sugar
1 teaspoon vanilla extract
Directions
Bake the whole spaghetti squash to 400 F for 40-45 minutes, until is it soft and you easily can pierce with a knife.
Let it cool, then cut in half , remove and discard the seeds. Use a large spoon to scoop the stringy pulp from the squash and mix it with all the ingredients and set aside.
Preheat oven to 450 F . Lightly grease a cookie sheet.
Place the mixture in the cookie sheet and bake for 30-40 minutes , until it is golden brown.
Let cool for 5-10 minutes and you can make pumpkin shapes if you would like.
