Introducing children to different ethic cuisines is a big part of the healthy eating adventure. Here’s a tasty soup. Tiny pasta in alphabet shapes makes this soup fun as well as nourishing.
Serves 8 small cups
Organic Ingredients
1 onion, chopped
2 garlic cloves, chopped
3 cups homemade broth or water
2 cups tomato juice
1 carrot, cut into chunks
1 stalk celery, sliced
1 red potato, cut into chunks
1 cup alphabet pasta
2 teaspoons olive oil
salt and pepper
Directions
Heat oil in large pot and add onion and garlic. Cook over medium-high heat until onion is soft, about 5 minutes.
Add tomato juice and broth or water, potato, carrot,celery, salt and black pepper. Cover and simmer until vegetables are tender, about 20 minutes.
Add pasta. Simmer until pasta is tender, about 15 minutes. Extra tomato juice or water may be added if thinner soup is desired.
