Organic Sweet Potato and Carrot Soup

These brightly colored vegetables have antiviral and antibacterial properties boosting your protection against infections. Carrots are rich in beta carotene, support liver and kidney functions making them excellent for detoxification.

Organic Ingredients

1 lb carrots, chopped

1 lb sweet potatoes, chopped

1 large red onion, chopped

1in fresh ginger, grated

3 sticks of celery, chopped

1 tablespoon chopped fresh coriander

1 pint vegetable stock

juice of 1 orange

Directions

Place all the ingredients in a large saucepan and bring to the boil, then turn down the heat and simmer for 30 minutes. Remove from the heat and allow to cool slightly the pour the contents into a blender and blend until smooth. Return to the saucepan to reheat, then pour into bowls and serve with a sprinkling of coriander.
