On lazy weekend mornings when you’re in the mood for baking try this extra rich recipe.
Apple and ricotta is delightful moist and delicious combination.
Serves 6
Ingredients
3 cups ricotta cheese
5 apples, peeled, cored and diced
3 tablespoon honey
2 cups water
3 eggs
3 tablespoon brown sugar
1 tablespoon vanilla extract
zest of 1 lemon
cinnamon to garnish
butter to grease the baking pan
Directions
Preheat oven at 350 degrees F.
Cook the apples in a small saucepan with the honey and water, until the apples are tender, the water is completely reduced and apples have caramelized.
Mix the ricotta cheese until is completely smooth and mix in the eggs, lemon zest and the vanilla.
Grease a baking pan and sprinkle with brown sugar.
Arrange the apples in the baking dish, topping them with the cheese mixture.
Bake for 20 to 30 minutes.
Unmold while warm, sprinkle with cinnamon.
Serve cold.
