Goat cheeses are easier to digest than cow’s milk cheeses because the fat cells are smaller, thereby more closely resembling human milk.
Combining the savory taste of goat cheese with scallions , chopped parsley and crisp flavor of cucumber slices, these balls are just delicious and elegant.

Ingredients
2 tablespoons unsalted butter, softened
1 tablespoon juice from one lemon
8 oz cream cheese
¼ teaspoon Worcestershire sauce
1 dash Tabasco
¼ teaspoon coarse salt
fresh ground white pepper
8 ounces goat cheese
2 tablespoon scallions, finely chopped
1 cucumber, sliced
Directions
Combine together butter, lemon juice, cream cheese tabasco, worcestershire, salt, pepper and mix very well using a mixer or a food processor. Stir in goat cheese and scallions and combine together.
Form a ball, roll in parsley to coat before serving.
Serve with cucumber slices.
