Meatloaf with Fresh Tomato Sauce

This recipe goes well with baby new potatoes boiled in their skins or mashed potatoes.




Serve 4-6

Ingredients

1 pound ground beef

1 onion, finely chopped

6 ounces coarse matzo meal

2 eggs, beaten

1 tablespoon mint, finely chopped

1 tablespoon orange zest, grated

1 tablespoon parsley, finely chopped

2 dashes of Tabasco sauce

½ teaspoon cinnamon, ground

½ teaspoon cloves, ground

1 cup beef stock

oil

salt, pepper

1 quantity Fresh Tomato Sauce

Directions

Preheat oven to 350 degrees

Combine together the beef, onion, matzo meal, eggs, mint, orange zest, parsley, Tabasco sauce, cinnamon, cloves, salt, pepper.

Heat the beef stock and keep it simmering

Grease a loaf pan (9.3×5.2×2.7inches) with  oil. Place the meat mixture into the pan, paking it down firmly.

Into a roasting pan half-filled with boiling water , put the pan and bake for 1 hour, or until the beef is cooked. Pour the hot stock over the meat as the loaf dries out.

Turn out onto a serving platter. Pour the Fresh Tomato Sauce over it for serving.
