How to cook live Lobster?

Lobster recipes include Lobster Newberg and Lobster Thermidor.

Lobster is used variously, or exemple in soups,bisque,lobster rolls and cappon margo.

Lobster meat may be dipped in clarified butter,resulting in a sweetened flavor.



How to kill a Lobster?

Place the lobster in the freezer for 2 hours. Bring a large pan of salted water to a boil and plunge the lobster,head first and upside down, into the water.

Boil for 2 minutes , drain and allow to cool.

Flatten the lobster on a work surface, holding the tail where it joins the body.

Press the tip of a large chef’s knife through the head to the cutting board, then bring the blade down to finish the cut.
