I like the best the pumpkin soup; it is creamy and the pumpkin with the tomatoes together are loaded with an important antioxidant beta-carotene and also vitamin C.

Organic Fish Tea

Serves 4

Ingredients

8 3/4 cups water

2 1/4 lb organic red snapper or other saltwater fish

1 large organic tomato (chopped)

1 tsp Hot chili pepper

1 organic thyme spring

2 organic scallion stalks (crushed)

salt and black pepper

1tsp organic chives

Directions

Bring to a boil the fish in a large saucepan. After 30 minutes add the remaining ingredients and simmer for 15 min. Strain before serving and garnish with chives.

Organic Pumpkin Soup

Serves 4

Ingredients

5 cups water

3 organic scallion stalks (chopped)

2 lb peeled organic pumpkin flesh (chopped)

3 organic tomatoes (skinned and chopped)

2 tabs organic butter

1/2 cup coconut milk

1/4 tsp grated nutmeg

salt and pepper

Directions

In a medium saucepan melt the butter and saute the onion and scallion. Add the water and remaining ingredients. Bring to a boil and then simmer for 30 minutes. Cool and blend in a food processor. You can warm again before serving.

Organic Palm Heart Salad

Serves 6

Ingredients

100g can organic palm hearts, drained and sliced crossways

2 ripe organic avocados, peeled and thinly sliced

2 ripe organic mangoes, peeled and thinly sliced

1/2 organic lime

1/2 organic hot chili pepper finely chopped and de-seeded

1/2 organic cucumber , peeled and thinly sliced

For the dressing:

1/2 organic lemon juiced

1tbs organic white wine vinegar

1tbs grainy mustard

4 tbs organic extra virgin olive oil

1tbs sugar

salt and black pepper

Directions

Mix all the salad ingredients .To make the dressing mix the lemon, mustard, vinegar and the sugar and drizzle olive oil stirring constantly. Serve the salad with the dressing on the side.
